California may have higher milk production than Wisconsin, but the Dairy State still ranks first in the nation for cheese making. According to the National Ag Statistic Service, Wisconsin's 114 cheese plants produced nearly 26 percent of the total cheese production in the country last year, with a total of 2.46 billion pounds being manufactured in 2006--up more than 61 million pounds from the year before. California produced 2.2 billion.
The nation as a whole also produced more cheese at 9.5 billion pounds, about 38 million pounds higher for the year.
